From the red cow pastures of Parma to the truffle-scented hills of the
Piemonte, we’ll plunder the culinary treasures of northern Italy’s Po
Valley. We’ll taste true parmigiano reggiano and sample exquisite
salumis. As a traditional sfoglina rolls her dough thin enough to read
through, she’ll explain the intricacies of hand-rolled egg pastas like
tagliatelle and tortellini. Then we’ll set off into the woods of Colli
Bolognesi and the hills of Piemonte to hunt for truffles and wild
mushrooms. We’ll also sit down with the chefs at Academia Barilla’s
brilliant new Parma facility and taste wines with the masters of Barolo
and Barbaresco.

No two places in the world are as renowned for producing food,
wine, and olive oil as Tuscany and Umbria. Nancy Jenkins, who has
enjoyed living in her Cortona farmhouse for the past 25 years, will
introduce us to her favorite growers and their families, markets,
butchers, bakers, artisanal cheese makers, and special friends during
this mouth-watering culinary adventure. We will be based in the southern part of Tuscany for the first part of
the trip, then move to a charming hotel in Umbria for the last few days
of the tour. This will be the perfect time of year to enjoy an
epicurean harvest of mushrooms, truffles, and olive oil on this once in
a lifetime adventure.

Nancy Harmon Jenkins cookbook author and contributor to The New
York Times and Food and Wine, will share her thirty years of experience
researching the food and culture of Italy - specifically Mezzogiorno,
or south: Sicily, Calabria, Basilicata, Puglia, and Campania. Food from
this region is full of flavor, drawing on the Mediterranean triad of
wheat, vines, and olives.Nancy will demonstrate how to make the most of
these ingredients, while introducing the culture that surrounds each
dish. You will try all of her food, paired with Italian wines selected
by Helen Gallo Bryan of Winebow, and leave with a copy of Jenkins’ new
cookbook, Cucina Del Sole: A Celebration of Southern Italian Cooking.
